About me

I’m Marke, and I have been cooking in Spain for decades, first learning to cook paella the traditional way in Barcelona in the 80s. I later lived and worked in Ibiza and since then, have cooked hundreds of paellas, all with an open heart over open fires. 

After years of cooking across Spain on secluded beaches, on boats, on clifftops, in caves - I have moved back to the UK (I know, I know, but I had a good reason) and now specialise in providing authentic paella cooked over a hardwood fire in just about any location in and around Brighton

To me, the paella is a simple dish but it has to be right. The right rice, the right sofrito, the right method. And of course, el socarrat - that layer of rice on the bottom of the pan that sings as it crisps and caramelises towards the end of the cooking. What better name for a business centred around a passion for paella.
